Vacuum salt is the purest form of salt, it can also be defined as sea salt that is highly purified and refined. The salt is extracted by pumping water into the underground salt layers to form a salt solution or brine. The vacuum salt is obtained using the vacuum evaporation process, which produces high-quality salts. The vacuum salt is widely utilized in the food industry and also in industrial uses such as de-icing, anticaking, chemical industries, and others which in turn has driven its market. The vacuum salt imparts textural properties such as enhancing the taste and boosting the flavour of the food. The utilization of vacuum salt as seasoning and flavouring agent in cuisines that enhances the savoury appeal of the food, further boosts its market growth.

The vacuum salts are gaining traction among the consumers, due to their increasing demand for impurities-free salt. The low sulphate, bromide content in the vacuum salt makes it a desirable option for incorporating it in various feed, food and chemical products. The increase in demand for processed foods among the consumers, especially the younger cohort has also contributed in driving the vacuum salt market.

Salt is a major component utilized for processing various food products and industrial solutions. The HoReCa sector is growing at a tremendous rate due to the increase in consumer base and their changing preferences towards food eating patterns. The rise in the trend of dining out and increase in consumption of ready-to-eat meals has led to wide incorporation of vacuum salt as a flavouring and seasoning agent in food.
